letter 'f' miraculously showing up in every .md file (v1.0.0)
for v1.0.0 I observe the letter 'f' miraculously showing up in some .md file as the last char before #eof -- 'some' means: not all ... and I can't detect a pattern.
I'm pretty sure I didn't put it there.
How come?

Never say never, and all that..... But that doesn't sound like something nvUltra did.... Not without a lot more explanation of some really unique circumstances.
What do your files "look" like? What language are they in? What are you doing to them? (typing a few words? Using command keys to shift lines up/down/over? Lots of text expansions?
Files in a shared/cloud folder? What other apps are interacting with them?

some alike timestamps or URIs

yes -- all reside in a shared folder on iCloud that is accessed from iPhone/iPad
What other apps are interacting with them?
none -- well, no: I use MD Notes on iPhone/iPad to edit those *.md
